Classic Panzanella

Stunning, quality ingredients do not need super complex recipes! 

That's why when we teamed up with our friends over at The Isle of Wight Tomatoes, we wanted to use their gorgeous, heirloom toms in a recipe that will let them *shine*. This classic Panzanella is exactly that. It makes for a perfect side salad for your summer barbecues and picnics. And the recipe for it could not be simpler. Quite frankly, the hardest part is not tucking into it right away!

Here's the method:

Serves 3-4 

  • Chop your tomatoes into bite-size pieces.
  • Put your tomatoes in a colander placed over a bowl, sprinkle generously with salt and toss. Leave for 30 minutes.
  • Meanwhile, mince your onion and garlic. Chop the bread into cubes.
  • In a bowl, mix the tomatoes with the bread and basil.
  • Collect the tomato juices and whisk them with onions, garlic, mustard, vinegar and around 100ml of olive oil. Season with salt and pepper.
  • Pour the dressing over the bread and tomatoes. Toss to coat evenly. Drizzle with more olive oil and salt to taste.
  • Wait for 30 more minutes before serving for the bread to soak up all of the deliciousness.

Ways to make it more your own:

  • Chunks of Mozzarella would work beautifully in there.
  • Add some cucumber in for some freshness and texture.
